Old Fashioned Pancakes

Light and fluffy, a weekend or weekday favorite!

Servings: 4 to 6
Prep time: 10 mins
Total time: 20 mins
Ingredients:
2 large eggs
2 tablespoons unsalted butter, melted and cooled slightly
1 cup buttermilk
1 cup whole milk
1 tsp pure vanilla extract
2 cups Ready Mix (see below)
Ready Mix (stores up to 3 months in a covered container) Yields 8 ½ cups
8 cups all-purpose flour
¼ cup sugar
2 tablespoons baking powder
1 tablespoon baking soda
1 teaspoon salt
Directions:
1. Whisk together eggs, melted butter, buttermilk, milk, and vanilla in a medium size bowl, stir to incorporate well.
2. Slowly whisk in 2 cups Ready Mix, blend until incorporated and only a few lumps remain.
3. Heat a skillet or griddle over medium heat, coat with butter or non-stick spray. Using a medium size ice cream scoop, or a 1/3 size measuring cup, scoop batter onto heated pan or griddle.
4. Cook until bubbles form on the top, about 2 minutes. Flip pancakes with a scapula and continue cooking 1 to 2 minutes. Serve warm with butter, maple syrup and your favorite toppings. Enjoy!
Notes:
Cooked pancakes can be wrapped in plastic and placed in a sealable freezer bag for up to 4 months. Reheat in the microwave or in a warm skillet.
